Living Pinterest: Homemade Vinaigrette



I was sick for 20 weeks of my pregnancy. And when you are sick like that you basically just eat whatever it is that you can force down your gullet.

One day it was baby carrots. I ate an entire large bag of them. This may or may not be why Westley's hair had an orange tint when he was first born. 

One week it was Newman's Own Balsamic Vinaigrette atop salad. I just ate and ate that stuff. I didn't enjoy it, I just could eat it, you know what I'm sayin?

Anyway now I can't stand the stuff. So I went on the hunt for one I could make myself and ended up pinning a simple recipe that sounded good. Now this may be something that everyone is like, "Oh yeah I make that all the time. I'm amazing and cook and have made my own vinaigrette's since I was like 8."

But I don't, so as simple as it is I got reeeal proud of myself with this one.

I literally had everything for this recipe in my pantry and fridge. Except that it calls for dijon mustard and I only had plain ole yellow and this:


So I crossed my fingers and dolloped a couple tablespoons of the sweet and spicy in there. And I only made a half batch, just in case it was gross.

Here is the recipe:


Homemade Vinaigrette
makes about 2 cups, enough for about 4 small jars
1 cup apple cider vinegar
1 cup olive oil
5 cloves garlic, minced
2 heaping tablespoons Dijon mustard
2 teaspoons honey
1 tsp salt
2 tsp pepper
Whisk all ingredients in a large bowl until dressing is emulsified. Pour through a funnel into container. Refrigerate.

You guys, it was gooooooooood. So I would recommend trying the sweet and spicy mustard. Or whatever weird mustard you got in your fridge. Why not?

We finished that jar in a week and I made a full batch we are going through right now.

The best part about it, other than it tasting so good, is that I don't feel bad eating it. The ingredients are so whole and good for you that I feel good splashing it on my greens.

Oh and Drew Jones literally said, "I think that is the best salad dressing I've ever had."

I nearly peed at the dinner table.

  1. Yummmm. Trying that this weekend!

    This week I tried the egg mcmuffins and they turned out yummm. My only revisions would be:

    1) Break the yolk. But that's a personal preference because I don't like eating all the yolk by itself like that.

    2) Don't toast the bread before freezing. When you stick it in the oven to re-heat it makes the bread hard as a rock.

    This weekend I'm going to try this Crack Bread pin for my mom's bday and I CAN'T WAIT. I'll let you know how it went next friday :)

    2. How'd the art opening go?? What did Drew Jones think of your ironing skills? If I could teleport, I would have totally been there. :)

  4. If it ain't Hidden Valley, I haven't eaten it. Oh the shame! If I can get Mike to eat green things like other adults do, then I'll try this :)

  5. I make a variation of this and love. Just need to get a legit bottle or something (like you have!) to put it in...mine always ends up in a leaky tupperware of some sorts. Not as cute for sure. :(
